Cabrales is a signature blue cheese made in Asturias, Spain. And one of these wheels can sell for more than $20,000. To be authentic Cabrales, the milk must come from dairies in this small area, and the wheels must spend at least two months aging in these natural caves to let the mold do its work. The cabrales cheese is more than a simple dairy product, because it also has a deep cultural and artisan background. It is the most well known identity in Asturias and out of the Spanish territory.
